On July 22nd, the time had finally come: Our woiimakers bottled their first own vintage – the crowning conclusion to a year full of passion, dedication, and artisanal curiosity.

Using a small vacuum rotary filler, Michi, Kim, Shino, Sofia, and Felipe each bottled their own batches of wine. The bottles were then corked and carefully stored in wire crates for aging—a very special moment for everyone involved.

His spontaneously fermented wine was supposed to be bone-dry and very straightforward. But as is sometimes the case with natural wine projects, things turned out a little differently: The spontaneous fermentation has given the wine an intense fruitiness and now also has a few more grams of residual sugar than expected. A surprising result – and precisely that's what makes the project so special.

The next step? Labeling! Soon, the first woiimaker wines will be sporting their final look. And of course, we're all eagerly awaiting the first official woiimaker tasting.
